The Shrew's Lemon Icebox Pie.

Alrighty! Its about that time again! Holiday recipes! Anyone else willing to share their favorite holiday dish or holiday desserts with their F-list? Its always a good idea to switch things up. Change is good. And I don't know about you but I love experimenting. Specially with desserts!! lol Prolly why I got MORE than my fair share of weight on me. lol

This is my favorite holiday pie my mother bakes for us.  Its really out of this world!!  lol  I call it.....................


               "The Shrew's Lemon Icebox Pie" or just "Lemon Icebox Pie"


 


Personally, I like the shrew part better!  lol  She chased me around the house last night when I told her I was going to call it that!!  lol  Anyways... on to the recipe!!!  And I encourage everyone else to share as well.  I'd be nice to bring some different flavors to our tables this season.


 


Graham Cracker Crusts Shells


Condensed Milk- 1 1/2 cans per pie  (we usually bake two pies at a time so we use 3cans in all)


3 eggs- separated


4-6 lemons- it all depends on how tart you would like it.  (Me, personally, I like 5or6 lemons because the condenced milk will make it sweet)


 


Preheat oven at 375 degrees.  In a bowl, you can begin adding your ingredients.  Begin by adding your yolks to the condensed milk.  Stir for about 2 minutes.  Then add in your freshly squeezed lemon juice.  Mix it really well.  And thats it!!  Pour the contents into the pie shells and bake it!!  Bake until the pie is lightly brown around the edges and top.  When done, let sit on the table until its cooled.  After that, put it in the refrigerator and chill it for about 3 hours... give or take. 


 


OH yeah!!  lol  You can throw out the white of the eggs or make a marign!!  We throw out the whites... the marign tends to take away from the flavor of the lemon and you don't want that... trust me!!
